The old cellar of the Parisian restaurant “Laurent” at auction

Le Laurent, a gastronomic pavilion nestled in a green square on the Champs-Élysées, is a place well known and appreciated by all of Paris, in particular by many political figures and businessmen. A restaurant and an exceptional setting where it is good to be seen, between flowery gardens, small lounges and boudoirs out of sight. Last February, the table, which is the subject of a concession called into play every ten years by the City of Paris, was awarded for the next twelve years to the Paris Society group of Laurent Gourcuff – also owner of a forty places including 1/3 of restaurants – to the detriment of the Partouche group, holder of the concession for eighteen years. Starred chef Mathieu Pacaud, already associated with Paris Society with Apicius, will be at the helm of this new project. In the meantime, the Artcurial house, located a stone’s throw from the Laurent, will disperse the restaurant’s exceptional cellar on June 23 and 24, 2022 through 7,500 bottles, not to mention a few pieces of service furniture such as a duck press, a table slicer or a carving trolley from Christofle. The total estimate of the sale is 1.2 million euros.

A catalog compiled by sommelier Philippe Bourguignon

The sale will be a wonderful journey through time for collectors and amateurs. Because before being a restaurant, the Laurent was a former hunting lodge under Louis XIV, before being transformed into an open-air guinguette during the Revolution. In 1842, Jacques-Ignace Hittorff, architect of the Gare du Nord in particular, was commissioned to redevelop the Champs-Élysées by King Louis-Philippe. He transformed the place into a neoclassical style villa which was to become, under the Second Empire, the Café du Cirque. It was finally in 1860 that the Laurent restaurant was born, named after its owner.

Beyond the renowned cuisine of the Laurent, the restaurant was also known for its cellar. A catalog of thousands of references, marked by the taste of Philippe Bourguignon, best sommelier in France in 1978 and general manager of the prestigious establishment until 2016. All the wines put up for auction have been carefully preserved in three underground cellars, present under Restaurant. The auction will give pride of place to all regions and all French wine-growing areas, as well as foreign ones, such as Germany with Egon Müller and Fritz Hagg or Italy and the Barolos of Roberto Voerzio.

Unsurprisingly, the largest volumes will relate to Bordeaux wines, represented by various vintages and for long aging. In Sauternes, let us mention the famous castles Fargues, Coutet, Yquem or Rieussec. We will follow 1,800 bottles of Bordeaux reds like Châteaux Margaux, Lafite-Rotschild, Montrose, Haut-Bailly, Petrus or Trotanoy. Burgundy – more than 2,300 bottles of red and white – and the Rhône Valley will also be honored with the domains of Romanée-Conti, Rousseau, Gouges, Mortet, Trapet, Niellon, Roulot, Leflaive, Raveneau, Reynaud , Chapoutier, Grippa or even Vernay. Finally, we will also find Alsace and Champagne through the Zind Humbrecht, Albert Mann, Deiss estates, passing through the fine bubbles signed Jacquesson, Agrapart, Dom Pérignon, Salon or Paillard to finish with a few signatures from the South, the Jura or the Loire including the coveted Grange des Pères, the Trevallon or Tempier estates without forgetting the wines from Macle, Puffeney, Yannick Amirault or Thierry Germain.
